Tween 60 (HLB value 14.9) and Tween 80 (HLB value 15.0) are commonly used in protein drinks. Due to its high HLB value and much lower price than emulsifiers such as sucrose esters with the same HLB value, it is usually used in combination with monoglycerides, spans, sucrose esters, etc. with low HLB values ??to meet the Chemicalbook needs of various protein drinks. The emulsifiers commonly used in plant protein milk drinks are mainly sucrose esters and monoglycerides, spans, tweens, and lecithin. Stability and storage conditions
Tween surfactants are relatively stable and are stable to electrolytes, weak acids and weak bases. They will gradually saponify when exposed to strong acids and strong bases. Their oleic acid esters are easily oxidized and will produce peroxides if stored for too long. Peroxides, heavy metal ions, increased temperature, and light irradiation accelerate the self-oxidation of aqueous solutions, break the polyoxyethylene chains, and hydrolyze to generate fatty acids. Tween 80 aqueous solutions are quite stable at pH 3-7.6, and the hydrolysis rate is the lowest. Tween should be placed in a sealed container, stored in a cool and dry place away from light.
